Food truck owner CheSa discovered she had Celiac Disease during her pregnancy, prompting her to adopt a gluten-free diet. This life-changing experience led her to become a passionate advocate for gluten-free living. Leaving behind her career in corporate finance, she pursued her true passion for cooking. Recognizing a gap in the market, she launched CheSa’s Gourmet Gluten Free Food Truck & Catering in 2015, offering a diverse menu of gluten-free Creole, Cajun, American, and Mexican dishes. Her business flourished, expanding to include a second food truck in 2018. Seeking to elevate her culinary skills, CheSa opened CheSa’s Art of the Bistro, gaining acclaim in Chicago’s food scene. Her innovative dishes have garnered attention from various media outlets, making her a beloved figure among food enthusiasts seeking gluten-free options.
