Food truck owner CheSa discovered she had Celiac Disease during her pregnancy, prompting her to adopt a gluten-free diet. This life-changing experience led her to become a passionate advocate for gluten-free living. Leaving behind her career in corporate finance, she pursued her true passion for cooking. Recognizing a gap in the market, she launched CheSa’s Gourmet Gluten Free Food Truck & Catering in 2015, offering a diverse menu of gluten-free Creole, Cajun, American, and Mexican dishes. Her business flourished, expanding to include a second food truck in 2018. Seeking to elevate her culinary skills, CheSa opened CheSa’s Art of the Bistro, gaining acclaim in Chicago’s food scene.
